The chef meticulously crafts each menu item with great attention to detail, ensuring the highest quality in every dish. The restaurant innovatively showcases local ingredients from Surat Thani, adding value and generating income for the local community while promoting sustainability.

Each dish draws inspiration from traditional Southern recipes, with enhanced textures and detailed components. Every plate is presented in a casual modern fine dining style, featuring a premium à la carte menu. Emphasizing sustainable products like fish and vegetables, the restaurant also grows edible flowers in an in-house organic garden, ensuring they are safe and free from chemicals.

Surat Thani is renowned as a source of top-quality seafood ingredients, including shrimp, shellfish, crabs, and fish. Thai fish, in particular, offers flavors and textures that are on par with those from other regions. At Synth Restaurant, we have chosen to use Thai fish for dry aging, enhancing its quality before incorporating it into our dishes.

Sustainability in Fish Industry

“The fish are disappearing from Thai waters” is a statement that is not an exaggeration. Currently, the population of marine animals in Thailand’s waters has significantly decreased, and their growth rates have also declined. Overfishing has exceeded the natural recovery rate, and uncontrolled fishing practices have led to the capture of small and non-target marine species, disrupting the marine ecosystem.

Our restaurant collaborates with local fisheries and sources ingredients from community enterprises in Surat Thani and other areas, such as Lay Lanta Seafood, which supports the Urak Lawoi community on Lanta Island, Krabi Province.

Our Organic Farm

Synth restaurant aims to represent the pinnacle of sustainability by using organic, chemical-free ingredients. We particularly dedicated to cultivating edible flowers and herbs, which are meticulously used to serve and garnish dishes. The farms we select focus on top-tier organic production, ensuring that the ingredients used are of the highest quality and completely free from chemicals.

Additionally, we aim to implement a Zero Waste concept by managing leftover food from the restaurant. We repurpose food scraps into other production processes to minimize waste and add value to materials within a sustainable food cycle. This approach ensures that Synth excels in both the quality of its food and the efficient use of resources.
