refers to a stream, river, waterway, water, sea, or ocean, as in the sentence (crossing the river to Khun Yukunthorn) from the literature “Sombat Amarin.” The word can also be used in the forms “สินธุ” or “สินธู.”

The word “สินธุ์” holds significant personal historical importance as it was the name of Chef Boss’s grandfather, who inspired and was the origin of the restaurant’s name.


Special Kanchanadit Oyster

Fresh white scar oysters from farms in Kanchanadit District are raised using French methods. The process includes sterilization with UV rays and the removal of slime from the oysters, as well as adjusting the water quality to match that of the Gulf of Thailand. This results in oysters that are exceptionally clean and possess a unique flavor, being sweeter and crisper than regular oysters.

through seven exquisite paintings that depict the journey of local ingredients from river to sea. These artworks showcase the tales of shrimps, shellfishes, crabs, and fishes.

The Thai traditional paintings, seamlessly integrated with Japanese Zen-style art, reflect a perfect blend of traditional Thai wave patterns and contemporary artistic expression. The realistic and powerful depictions of animals and flowers highlight the beauty and vibrancy of the region’s cuisine and culture.

The restaurant promotes sustainable development by using local ingredients to preserve biodiversity. It emphasizes effective food waste management, environmental considerations, and the protection of local culinary heritage, making food a symbol of the region.

Although from Surat Thani, Chef Boss only discovered its rich local culture and community needs through a rural development camp. This experience deepened his awareness of environmental challenges—droughts affecting crops, overfishing reducing marine biodiversity, and coastal erosion threatening oyster farms. Firsthand interactions with farmers and fishermen strengthened his commitment to sustainability and food security.
